Local butcher ties up sausage win
MIRRABOOKA butcher Paul Marinovich took out top prize in the north competition of the Australian Meat Industry Council Sausage King Competition of WA last week.
Winning first place in the Open Class Gourmet for his German bratwurst Munich-style sausages made with parsley and yellow mustard seed was just reward for the owner of Adrian’s Continental Smallgoods, who has been in the industry for 28 years.
“I come from a long line of butchers and have been lucky enough to have worked with some amazing European butchers including my father and brother,” Mr Marinovich said.
“Dubrovnik Butchers was started by father Paul senior, and is now run by brother who also won an award so for us to win is pretty special.”
Mr Marinovich’s father was recently diagnosed with Alzheimer’s, a condition Mr Marinovich was hoping to now raise awareness of.
“I took this award personally because my father has taught me everything I know,” he said.
“It’s super important because he was recently diagnosed with Alzheimers and this award is for him – it’s like my brother and I can carry on his traditions in some special way.
Mr Marinovich will now go on to take part in the national final at Fraser’s Restaurant in February.
“I’m thankful and so proud to have received a guernsey to represent WA in the national final – it’s such an honour,” he said.
